Easy Lunch: Apple-Banana Salad


I was having an emotionally stressful day, processing thru some grief but I resisted the urge to emotionally eat. Later, I realized it actually had been a few hours since I had eaten last so I made another apple salad but added banana and more coconut this time.

Ingredients:

chopped apple
sliced & quartered banana
cranberries
coconut
sunflower seeds
tablespoon pb
(Adams All Natural Peanut Butter)
'granola' aka protein bite crumbs

This is SO good and filling. Yesterday I made it with two apples but one was more than enough to be filling. I think I could eat this every day!
